White Christmas Slice

So Christmas is right around the corner, and I’m kinda not a Christmas person, before we had our son I was strictly a tree goes up a few days before Christmas and if I had my way it would come down as part of my Christmas day tradition. I’m a tad more lenient now because I loved the Christmas tree when I was younger, the memories of putting our tree together as a family, sitting on my Dads shoulders to put the star on, that tingle of excitement just when the lights have been plugged in and sitting down looking at the lights as though we had just completed the most important task of the year.

The past 7 years Ive been working on putting aside my Grinch tendencies in lieu of sharing those same memories with my son that I experienced.

All that said I have a few exceptions to Grinch status, specifically White Christmas and Malteaser reindeers. Chocolate mousse snowman have also been added to the list this year.

This year I chose to make it without copha as while I’m not particularly bothered by it as its not something we have often, I know not everyone feels the same, so I’ve stuffed all the goodness and flavour of White Christmas without compromising on ingredients. We also added some dark chocolate on top to tone done the sweetness.

Ingredients

Instructions
  1. Line a slice pan with grease proof paper
  2. Using multi-blade. Add white chocolate and pulse 15 seconds.
  3. Add stir assist. Melt chocolate at 50°C for 4 minutes at speed 1 or until completly melted
  4. Add remaining ingredients to a separate large bowl and mix with a spoon, pour over white chocolate and mix with a wooden spoon until everything is coated in the chocolate.
  5. Press mixture firmly into prepared pan and let set for several hours in the fridge.
  6. Using multi-blade. Add dark chocolate to bowl and pulse for 15 seconds. Melt at 50°C for 4 minutes at speed 1. Spread in a thin layer over white chocolate and let set.
  7. For easy cutting let sit at room temperature for 30 minutes and cut with a very sharp knife that's been run under hot water and dried.
Recipe Notes

We did try adding the ingredients directly to the white chocolate but didn't feel they coated everything as well as needed.

Ensure the bowl is clean and completely dry between melting the white and dark chocolate.
