Valentine Thumbprint Biscuits

Only a few days until Valentines Day and while we don’t really celebrate it with anything elaborate, I feel its important to teach and remind my son to always make sure the people he loves, know how important they are. That’s why for the next week Ill be slipping these in his lunchbox and packaging up a few for him to give to family.

Ingredients

Instructions
  1. Pre-heat oven to 180°C Using egg whip Cream butter and sugar on speed 5 for 2 minutes. Scrape down sides and repeat mixing as needed.
  2. Add egg yolk and vanilla extract and mix speed 3 for 1 minute. Scrape down sides and repeat mixing as needed.
  3. Add flour and baking powder and mix speed 3 for 1 minute
  4. Roll into tablespoon sized balls and flatten slightly. Place on a lined cookie tray.
  5. Using your index finger push dough in slightly on the diagonal twice to create a heart shape. Fill heart shape with a small amount of jam.
  6. Bake for 9-12 minutes or until edges are lightly golden. Allow to cool for 20 minutes before removing from tray.

    I have just made the Valentine’s Day biscuits and found that the egg whisk on the c/p really only pushed the butter sugar mixture to the sides and didn’t really blend it properly. Is this what is supposed to happen?

      Hey, sorry about that. I’ve come across that problem a few times and generally try to include a “scrape down side and repeat as necessary” part in the instructions. I didn’t hit that snag in this recipe during testing, but will edit the recipe in case anyone else hits the same problem. Thanks for letting me know. Hope they were delicious.
