Sticky Date Pudding

Have you ever had one of those foods that you hate but you’ve never actually tried it? Its just the thought of it that makes you cringe. Sticky Date Pudding was that food for me for many years, no idea why, it just wasn’t on my radar as something I had any interest in trying. Thankfully I’m a Sticky Date reform now but spent 20 years of my life without is goodness. So just in case you haven’t tried it and for those who have we’re sharing our favorite Sticky Date Pudding.   Whats the one food you hate that you’ve never tried?

Ingredients
Cake
Butterscotch Sauce

Cake
  1. Grease and line a 21 cm cake tin
  2. Using multi-blade Pulse dates 15 seconds Add water and cook 100°C, 4 minutes at speed 1 Add bicarb and quick stir for 5 seconds Set aside
  3. Using butterfly. Add sugar and butter and mix 1.30 minutes at speed 4 Set to 40 seconds and speed 4 and add eggs through measuring cup hole.
  4. Add vanilla, flour and date mixture and quick stir for 10 seconds. scrape down and repeat quick stir if needed ensuring batter is combined.
  5. Pour batter into your cake tin and bake for approx 35-45 minutes. Cake is ready when a skewer inserted into middle comes out clean or until it springs back when lightly pressed in the centre.
Butterscotch sauce
  1. Using multi-blade. Place all ingredients into the cook processor Cook on 115°C for 10 minutes at Speed 3

    I never thought I’d like sticky date pudding either until I finally tried it and now it’s one of my favourite desserts!

    I think as a kid I also didn’t like sticky date pudding without ever having tried it but now I love it, such a perfect winter dessert. Thanks for sharing your recipe, looks great

    I love love love sticky daye pudding. I made one the other day in my thermomix for tje firstbtime and it was so good :))
