Raw Chocolate and Coconut Bars

We’re gearing up for a holiday over the next few days so things may be a bit quieter around here over the next week and a half but I promise as soon as we get back it will be back to regular postings.

Before I go though I thought I would leave you with a tasty little tidbit that we’ll be snacking on during our horrifically long train trip/flight. (Ok 5 hours isn’t long but if you’ve ever traveled with a 7 year old you’ll understand my hesitation, feel free to leave tips in the comments:))

Chocolate and Coconut Raw Bars Recipe

These came about because my mum was desperately looking for something my youngest sister would actually eat that would provide her with enough energy for soccer training and games, I set upon remaking a pre-packaged date based bar she’s fond of. This has become a regular in both our household and my mums. Mum gets a big batch made up every few weeks and stores them in the freezer. While I haven’t frozen them myself, I haven’t heard complaints from her end so they must be fine, just let them come to room temp before eating.

Ingredients
Servings: bars
Instructions
  1. Using multiblade
  2. Add nuts to bowl and pulse for 20 seconds
  3. Add remaining ingredients to bowl and increase speed gradually to 10 and blend for 1 minute.
  4. Roll into balls or squash into a loaf pan.
Recipe Notes

We use a loaf pan and get 5 decent sized bars
