Pumpkin Soup

As much as I’m excited about spring finally showing its beautiful sunny face, it also means the end to soup season is in sight, so I’m fitting in as much as I can without sending husband and Mr 7 insane because they aren’t really interested in soup.

Usually Ill find myself standing over a saucepan of soup with the stick blender, which takes forever, so its great being able to chuck everything in the Cook Processor and know my dishes are going to be minimal.

Ingredients

Instructions
  1. Using multiblade Chop garlic onion, carrot and apple on pulse for 5 seconds
  2. Set to Boil P2. Add oil to onion mix and press start.
  3. At the beep add pumpkin, sweet potato, water and chicken stock paste. and press start. When finished ensure pumpkin and sweet potato are soft. If not increase the cooking time for 5 minutes at 110°C. If they are ready, increase speed slowly to 10 and puree until desired consistency is reached.
  4. Serve with sour cream or plain Greek yoghurt, some cracked pepper and a bread roll.
