Peanut Caramel Squares

These little treats are great! Kid and husband friendly, they are a bit of work but they are delicious. The recipe needed a bit of tweaking so keep an eye on the throughout the process.   1. Method: Preheat oven to 180 and grease a slice tray (18 x 28cm).
  2. Insert multi blade into bowl
  3. Place peanuts into bowl and chop roughly by pressing pulse button once for a few seconds. Set aside.
  4. Place butter and sugar into bowl, Close the lid. Set the timer for 1 minute. Press Start and set the speed to 5. Open and scrape down.
  5. Add the egg yolk and vanilla extract, Set timer for 30 seconds. Press Start and set the speed to 5. Open and scrape down.
  6. Add flour, baking powder, cornflour and salt, press start and run the machine at speed 5 for 20 seconds or until it becomes a firm dough.
  7. Press into the base of the greased tray and bake for 15 minutes or until golden.
  8. While the base is cooking you can make the topping.
  9. Insert stir assist blade into bowl
  10. Place brown sugar, golden syrup and butter into the bowl, set the timer for 6 minutes, the temperature to 70o and the speed to 3. When finished add chopped nuts and mix in for 10 seconds on speed 3.
  11. Spread the topping carefully over the hot base using a spoon or spatula and small amounts of topping at a time. To make it easier you can heat a spoon under hot water to help spread the topping
  12. Cook for a further 5 minutes in 180° oven.
  13. Let cool completely in tray and cut into squares.
