Snake’s Peanut Butter and White Chocolate Cookies

Its taken me awhile to get used to mixing baking mixes in the cook processor but I was really happy this time round with how well it creamed the sugar and butter.

These are a divine combination of peanut butter and chocolate, the lesser amount of white chocolate really lets the peanut butter shine while still complimenting it and the mellow undertones of the brown sugar adds a lovely depth to the cookie.

This recipe was passed on by my Mum who got it of a friend, so not sure who Snake is but they sure have good taste.

Ingredients

Instructions
  1. Preheat oven to 180°C and prepare 2 baking trays with grease proof paper
  2. using multiblade mix butter and peanut butter 20 seconds, speed 3
  3. Add brown sugar and mix 30 seconds speed 4
  4. Add egg and mix 20 seconds speed 3
  5. Add flour and mix speed 2 until combined
  6. Add white chocolate chips and mix 5-10 seconds speed 1
  7. Roll into tablespoon sized balls and place on baking tray about 4 cms apart. Flatten tops slightly.
  8. Bake in your preheated oven for 12-15 minutes or until the edges are lightly golden
