I feel as though this has been a life long search to find that perfect muesli bar recipe that lives up to our standards, or more so my husbands standards, who is an Uncle Tobys bar guy. After tasting these bars though I definitely feel we have achieved our goal. They are chewy, but hearty, packed full of oats and the possibility for mix ins are beyond endless. Husband’s favourite so far has been chocolate and while they are good I’ve been swooning over the dried apple, cranberry and almond bars. Mr 7 however wont have a bar (pun intended) of them.
You really cant go wrong with anything you add (jersey caramels are darn good in them), and we have been sitting on this recipe for the past 3 months now and have made a batch weekly so we’ve tried a fair few combinations with no fails.
Perfectly chewy muesli bars with unlimited possibilities.
Pre heat oven to 180°C. On baking paper spread out oats in an even layer. toast for 15 minutes. (optional, but adds flavour)
Add butter, brown sugar and honey to main bowl. cook 120°C for 5 minutes on speed 1. Add oats and mix speed 2 for 2 minutes. Add mix ins and mix speed 2 for 2 minutes. (If using chocolate chips allow mixture to cool for a few minutes before adding them)
Squash into a 20 or 22 cm tin lined with baking paper, let set in fridge for 2 hours before cutting.
Cut into 8 or 10 pieces.
They set up fairly firmly in the fridge but soften beautifully in the lunchbox during the day. We also have a batch frozen for rotation pretty constantly and they defrost great.
