Meatballs

As previously mentioned, life has been a tad crazy lately. Husband has been working an hour away from home the past 3 years and the commute have been hectic for all of us. We have finally made the move to be closer to his work so hopefully, we’ll be able to spend more time as a family which we are all looking forward to. On top of the move, my son’s birthday landed a week after we would have moved and he would have had to ask his friends to travel to our new town for his party or skip it completely. So being crazy and one who likes to extend her to do list when its already 5 pages long, I opted to throw his party the day before we moved. Thankfully all his friends’ parents are absolutely amazing and changed schedules and prior commitments so the kids could all attend with only a few days notice. Everything went down without a hitch and the kids had a great night and we are now settled mostly whilst trying to find a routine. So until something big pops up and consumes me, my kitchen/cooking/baking hiatus has hit an end and I couldn’t be more grateful.

Ingredients

Instructions
  1. Using mutli blade. Add carrot, onion, bread and cheese and grate speed 10 for 50 seconds. Scrape down.
  2. Add egg, mince, sauces and flour and mix speed 4 until combined.
  3. Roll into tablespoon sized balls and place on a greased oven tray. Refrigerate for about an hour. This will help them stay together when cooking.
  4. Bake at 180°C for 30-45 minutes. Flip meatballs halfway through. Alternatively you can fry them off in a heated frypan.
