Ashamedly this is the first cake recipe on here, mostly because coming from a cake decorating background when I chose to bake for fun making a cake feels far to much like work so I tend to veer in different directions.
We had one of the lovely staff retire from my husbands work recently. I catered their Christmas party last year and knowing husbands colleague loves lemon I included this in the array of desserts. During the free for all take whatever was left at the end of the day, she grabbed the remaining few slices up faster then she could say Yum.
The perfect balance of sweet and tang this cake makes a stunning afternoon tea treat.
