Lemon Cake

Ashamedly this is the first cake recipe on here, mostly because coming from a cake decorating background when I chose to bake for fun making a cake feels far to much like work so I tend to veer in different directions.

We had one of the lovely staff retire from my husbands work recently. I catered their Christmas party last year and knowing husbands colleague loves lemon I included this in the array of desserts. During the free for all take whatever was left at the end of the day, she grabbed the remaining few slices up faster then she could say Yum.

The perfect balance of sweet and tang this cake makes a stunning afternoon tea treat.

Ingredients
Lemon Syrup
Servings: slices
Instructions
  1. Preheat oven to 180C. Grease pan and line base and side with baking paper.
  2. Using egg whip. Add eggs and sugar and mix on speed 4 for 2 minutes.
  3. Add lemon and zest and mix on speed 1 for 1 minute
  4. Add flour, yoghurt and oil and mix speed 1 for 50 seconds
  5. Pour into prepared pans and bake in the oven for 45 minutes or until a skewer inserted comes out clean.
Lemon Syrup
  1. Add sugar and lemon juice to main bowl and heat to 90 speed 2 for 4 minutes or until slightly thickened and sugar is dissolved
  2. Poke 15 or so holes in cake and pour syrup over evenly. Let soak into cake for 15 minutes before serving.
