Fruit Jubes

I’m finding it harder and harder to find some of the lollies I loved growing up. Musk Sticks, Bananas and Jersey Caramels are some of my favourites and will always go first from a lolly bag. Sometimes though nothing is better than good old Jubes but surprisingly, they are becoming harder and harder to find (especially when I only want red ones 🙂 These were soft but still had a nice gummy bite and they were eaten incredibly fast! Everyday when my son got home from school the first thing he said was “You know what I want for afternoon tea….”

Using jelly crystals the flavours are so easy to customize and you can make one flavour or multiple flavours.

Instructions
  1. Using mutiblade. Add all ingredients to bowl and quick stir for 20 seconds. Let sit for 1 minute.
  2. Bring to the boil 100°C for 3 minutes at speed 1.
  3. Continue boiling at 110°C for 6 minutes at speed 1.
  4. Pour into a very well greased and with baking paper 20 cm square tin. Let sit overnight until fully set. The mixture is still a bit sticky so make sure any surface you put it on is greased or has sugar on it. The best way I found to do it was coat the top in sugar before flipping it out. Once flipped coat the other side in sugar and then proceed with cutting into cubes. Once cut into 1-2cm cubes, coat in sugar.
