Double Chocolate Lamingtons

In preparation for Australia Day on the 26th of January, I decided to start thinking about quintessential Australian foods that could be easily made in the Cook Processor. I decided on Lamingtons. For those of you that don’t know, a Lamington is essentially a sponge cake cut into rectangles, coated in a chocolate icing and then coated in coconut. Often there is a layer of cream on the inside with a bit of jam which we left out of this version but it’s easy to do. I decided to really go for that chocolate taste and made Double Chocolate Lamingtons using a chocolate base rather than vanilla. I love the way the Cook Processor handles classic recipes and this was no exception.  If you’ve never heard of a Lamington, try them, trust me and enjoy!

Ingredients

Instructions
Lamington
  1. Using dough blade. Add coffee and chocolate and mix speed 3 for 3 minutes
  2. Add egg, buttermilk, oil and vanilla extract to coffee and mix speed 3 for 1 minute.
  3. Add sugar, flour, cocoa powder, baking powder, baking soda and salt and mix speed 3 for 2 minutes
  4. Pour into a 21 cm greased square pan and bake for 35 to 45 minutes in a 180°C preheated oven or until cake springs back when lightly touched. Cool on cooling rack
  5. Cut cake into 16 pieces or desired Lamington size and freeze for several hours.
Icing
  1. Add butter and water and heat for 4 minutes at 120°C no speed.
  2. Add icing sugar and cocoa powder and mix speed 3 for approx 2 minutes.
Assembly
  1. Using a fork dip a lamington square in chocolate icing ensuring its completely covered, let it drip for 15 seconds then coat in coconut. Repeat with remaining lamingtons. Let lamingtons dry for approx 1 hour or until dry to the touch.

    What a perfect recipe for Australia Day! Or any time really, in my opinion! I grew up on lamingtons and have so many great memories of eating (LOTS of) them. Yummy!
