Coconut Caramel Sauce

If I had to pick one food that I would live of it would be coconut in any shape and form, which is why this variation on caramel sauce makes me very happy.

We’ve used this on so many things over the years, namely drizzled over Sticky Date pudding and Ice cream. It would even make a glorious substitute for the chocolate sauce in our Chocolate Fudge Milkshake.

It was super easy to convert to the cook processor and it’s a bonus when you don’t have to stir it yourself, gives you time to scoop out some ice cream.

Instructions
  1. Using multiblade. Place all ingredients into the cook processor Cook on 115°C for 10 minutes at Speed 3 Store in a jar and store in the fridge for up to 2 weeks.
Recipe Notes

If you don't like coconut you can use normal cream.

We've tried replacing the half the butter with Nuttelex and while it does work its not quite as smooth or thick.

It thickens up quite a lot in the fridge so if your wanting it for drizzling, warm it us for 10 second in the microwave.
