Chicken Cashew Stir fry

I’ve had a packet of Cashew Stir Fry sitting on my cupboard shelf that I had picked up for a lazy night dinner many months back. Despite the ease that comes with packets, after a quick glance at the ingredients, I realized I had everything minus the preservatives already in the pantry so figured ‘why not’. With the Cook Processor bringing the sauce together in all of 5 minutes it was definitely worth making it myself.

Ingredients

Instructions
Stir fry Sauce
  1. Using multi blade. Add cashews, ginger and garlic and blend speed 10 for 30 seconds.
  2. Add remaining ingredients and blend speed 10 for 2 minutes.
Stir fry
  1. Prepare noodles according to packet directions. (Usually a soak in boiling water)
  2. Add oil and heat 130°C for 30 seconds. Add ginger and garlic with the blade spinning on 10. Add onion and chop on speed 8 for 15 seconds. Saute at 130°C for 2 minutes, speed 1.
  3. Add chicken and brown 140°C for 3 minutes at speed Int
  4. Add sauce and cook 140°C for 2 minutes at speed 1
  5. Add veges and cook 140°C for 2 minutes at speed 1.
  6. Add noodles and stir with a wooden spoon on 140°C for 2 minutes. (This didnt work with stir assist as they just wound themselves around the spindle.)

    Tried this tonight with a few substitutions as we didn’t have rice wine vinegar or cashews. It turned out pretty good, will try again but with the correct ingredients
