Caramel Mud Cake

 This was our birthday cake 3 times this year. So since this blog was officially  a year old a few months ago, I think it’s only fair it’s also shared on here. It is rich and dense and owns all the characteristics of a mud cake.

Caramel Mudcake

The icing, when it sets, it creates a beautiful crackly covering for your mud cake. It sets really really fast, so you will want to pour and spread it quickly. If you find it setting too fast, add a tablespoon of milk. be careful not to add too much though as it will affect how it sets.
Optionally you can halve the cake and add a ganache, both dark chocolate or a coconut ganache go beautifully.

Instructions
Mud Cake
  1. Preheat oven to 150°C Grease and line a 20 cm round or square cake tin with baking paper.
  2. Using multi blade. Add white chocolate and pulse for 20 senonds
  3. Add water, brown sugar and butter and heat on 80°C for 12 minutes at speed 1
  4. Set timer for 15 minutes on speed 3 to allow to cool
  5. With speed on 4 add eggs one at a time through measuring cups hole, let mixer run until combined. Add vanilla extract and quick stir
  6. Add flour and mix on speed 4 for 30 seconds. Scrape down and repeat if needed.
  7. Pour the mixture into the prepared tin Bake in the oven for 60-75 minutes - the cake is ready when a skewer inserted into the middle comes out clean.
  8. If the top of your cakes may begin to over-brown cover it loosely with foil. Remove the cakes from the oven and set aside to cool.
Icing
  1. Using multiblade Add brown sugar, butter and milk.
  2. Cook at 100°C for 9 minutes at speed 1
  3. Add icing sugar and mix speed 5 until combined.
  4. Pour quickly over mud cake and spread as quick as possible as it sets fast.
