Caramel Cheesecake

A few weeks ago I picked up Dr Oetker Fudge chunks from the new range Dr Oetker have brought out at Coles (not sponsored, just super excited) and posted on the facebook page for ideas on what I should do with them. When cheesecake was suggested, I was actually pretty stoked because it was more original then my ideas of fudge stuffed brownies and fudge stuffed cookies. I’m totally feeling the picture says 1000 words vibe with this one so apart from a huge thumbs up from my husband and I’m loving how smooth the cook processor gets cream cheese Ill just leave you with the recipe.

Ingredients

Base
  1. Preheat oven to 180°C and line a 20-22 cm spring form pan with grease proof paper.
  2. Using multi-blade. Melt butter at 80°C for 2 minutes at speed 1.
  3. Add biscuits and blend speed 9 for 25 seconds.
  4. Push base mixture firmly into pan and bake for 8-10 minutes. Let it cool on a cooling rack and lower the oven temp to 150°C.
Cheesecake
  1. Using multi-blade. Add cream cheese and sour cream and blend speed 7 for 5 minutes.
  2. Add caramel top 'n' fill and blend speed 4 for 1 minute.
  3. Add sugar, flour and salt and blend speed 4 for 3 minutes.
  4. With cook processor running on speed 4 add eggs and vanilla extract and mix until just combined. You don't want to over mix at this point.
  5. Pour mixture over cooled base and bake in oven for approx 55 to 65 minutes. The cheesecake is done when the center is almost set, but jiggles slightly when gently shaken. Let cheesecake cool completely on cooling rack before making the topping.
Fudge Topping
  1. Using multi-blade. Add caramel top 'n' fill, cream and fudge chunks. Melt at 100°C at speed 1 for 5 minutes.
  2. Add white chocolate and mix speed 2 for 30 seconds. chocolate should be melted. Let cool until it is cool to the touch but still spreadable. Pour on top of cheese cake and smooth. Let it set in the fridge for an hour. Decorate with additional fudge chunks or chocolate shavings.
  3. This is best made the day before you are wanting to serve it.

    This definitely looks like something I would gravitate to, even on a table full of 100 desserts! How can you go wrong with chocolate and caramel AND cheesecake? Great creation!
