Using stir assist.
Add beef, flour and paprika to bowl and mix speed 2 until beef is coated. Set aside.
Add 1 tablespoon oil and heat 140°C for 40 seconds. Add beef and brown 140°C for 5 minutes at speed 1. Set aside.
Add half the butter and melt 60°C for 1 minute at speed 1. Add mushrooms and saute at 120°C for 7 minutes at speed 1.
Add remaining butter and cook onion and garlic at 120°C for 5 minutes at speed 1.
Add stock, worcestershire sauce, tomato paste, sour cream and the browned beef. Cook, at 120°C for 5 minutes at speed 1. If everything isn’t completely mixed continue stirring on speed 1 without heat until combined.
