When I was a teen, the town I was living in seemed to have an unspoken competition as to which cafe had the best Nachos. Considering the main street had 20 odd cafes there were a lot of nachos to pick from, everyone had their favorites and opinions on why the others weren’t as good. Eventually the Nacho obsession of the town petered out but I never lost my love for them. After I moved out of home we just made basic nachos, a taco packet mix with mince, corn chips, sour cream and avocado. Eventually we cut out the taco packet mixes and have been using this recipe since. Full credit goes to the husband for converting this to the cook processor.
