Beef Nachos

When I was a teen, the town I was living in seemed to have an unspoken competition as to which cafe had the best Nachos. Considering the main street had 20 odd cafes there were a lot of nachos to pick from, everyone had their favorites and opinions on why the others weren’t as good. Eventually the Nacho obsession of the town petered out but I never lost my love for them. After I moved out of home we just made basic nachos, a taco packet mix with mince, corn chips, sour cream and avocado.  Eventually we cut out the taco packet mixes and have been using this recipe since. Full credit goes to the husband for converting this to the cook processor.

Ingredients
Nacho mix
Guacamole

Instructions
Nacho Mince
  1. Using stir assist. Add 1 Tablespoon oil and heat 140°C for 1 minute. Add half the beef and brown at 140°C for 8 minutes at speed Int. Repeat with the remaining beef. Set aside.
  2. Preheat oven to 170°C
  3. Using multiblade. Pulse onion 4 seconds. Add 1 tablespoon of oil and cook 120°C for 5 minutes at speed Int
  4. Add garlic, chilli and cumin. Cook 120°C for 1 minute at speed Int
  5. Return beef to pot and add oregano, tomatoes, beef stock and season with salt and pepper. Cook 100°C for 10 minutes at speed int. Pour into oven safe dish.
  6. Cook covered for an hour an a half in oven. Add kidney beans in the last 15 minutes and return to the oven uncovered.
Guacamole.
  1. Cut avocado in half, remove the seed and scoop out the flesh.
  2. Using multiblade Add avocado to bowl and blend speed 4 for 30 seconds.
  3. Add remaining ingredients and blend speed 4 until desired consistency.
Assembly.
  1. Arrange nachos on plate/bowl. Layer mince over corn chips and top with cheese, sour cream, salsa and guacamole.

    This is one of my kids all time fav’s. They usually have the night after we’ve had bolognaise as a way of using up the leftover beef mince. Thanks for linking up with FFF xx
