Banana Honey Pikelets

My kid hates pancakes. Life used to be different, he used to love them and ask for them on a daily basis 4+years ago, now Mr 7 eats his peanut buttered bread (not toast) and banana for breakfast every. single. morning. We live a pancakeless life. However, call them pikelets and make them small and he is all in, because lets be honest they are essentially the same thing, slight ingredient semantics aside.

They are stellar for lunch boxes and freeze brilliantly making them great for “i forgot to pack lunch boxes last night” and ‘my kid ate all the cheese and every other fast and easy snack” rescue remedy. With just a hint of sweetness these make the perfect any time snack. Proof of perfectly fitting everyones taste, I’m akin to jam and cream, Mr 7 is peanut butter and Husband is straight up butter. Ingredients
Servings: pikelets
Instructions
  1. Using multi-blade. Add all ingredients and mix on speed 6 for 20 seconds.
  2. In a mediam heat fry pan melt a dab of butte and drop tablespoons of pikelet mixture in. Cook on first side until bubbles appear, flip and cook on other side until golden. Serve warm or refrigerate/freeze in an air tight container until needed.
