I usually avoid lemon curd, the whisking, the careful heating, the separating yolks… delicious time consuming hassle. The Cook Processor makes lemon curd seem like a breeze, seriously it takes me longer to make a sandwich.
Make this and fill tart cases, put on toast, pancakes, scones, drizzle some over yoghurt or with a spoon:)
