5 minute Lemon Curd

I usually avoid lemon curd, the whisking, the careful heating, the separating yolks… delicious time consuming hassle. The Cook Processor makes lemon curd seem like a breeze, seriously it takes me longer to make a sandwich.

Make this and fill tart cases, put on toast, pancakes, scones, drizzle some over yoghurt or with a spoon:)

Instructions
  1. Using egg whip place all ingredients into bowl and cook at 100°C for 5 minutes on speed 4.
  2. Store in a covered jar/container in the fridge for 2 weeks.
  3. Many readers have had success doubling the ingredients and time cooked.
